Wasn't that snow on Tuesday morning a surprise? It sure made it look like a Christmas wonderland.
With the holiday season in full swing, I have included a Christmas cookie recipe this week that my grandmother, Cora Oden, used to make. You can not be in a hurry to make there cookies, as it requires dough to rest in the refrigerator overnight. it is simply called:
Grandma's Sugar Cookies
1 tsp. cream of tarter
1 tsp. baking soda
5 3/4 c. flour
1 c. sugar
1 c. powdered sugar
1 c. butter
2 egg, well beaten
1 c. oil
2 tsp. vanilla
1 c. sugar for coating
In a separate bowl, blend the cream of tarter, baking soda and flour together and set aside.
To make the cookie dough, cream together the regular sugar, powdered sugar with the butter. Then beat in the eggs. Add the oil and mix together. As you are mixing add the vanilla.
Slowly stir in the dry ingredients and blend together. Leave the dough in the bowl and place a piece of plastic wrap over the top and refrigerate over night.
The next day, take the chilled dough and break off into small pieces and roll into balls. Place the balls of dough in a bowl with the extra sugar in it and roll them until they are entirely covered with sugar. Then, place them on a cookie sheet. Take a water glass and flatten out the cookies.
Bake in a pre-heated 350 degree oven for 10-15 minutes. Do not over bake. Watch them closely. Once the cookies are done, remove them from the oven. Let them rest a little bit and then transfer them to cooling racks before serving. Cool completely before putting them in a container if you are going to store them.
With shotgun deer hunting season beginning last Saturday, Dec. 3, our town has had a lot of hunters visiting here this weekend.
Also, last Saturday, the Exline Old Country Store had a Christmas Open House. There was a nice turn out for the evening. Free holiday cookies and coffee were available to everyone.
No one ended up buying the box of Christmas cards that had a $50 gift certificate from Wal-Mart hidden in it. So now they are having a drawing to win the gift card. You may register once a day until Tuesday, Dec. 13 which will be the day they draw the winning name for the gift card.
On Sunday the Exline Ramblers 4-H Club had a cookie exchange. They delivered some of their cookies to the residents of the Coal Miner's Commons houses and to the Exline Old County Store. They even delivered a plate of home made cookies to our house, which was really nice of them.
The club members also went shopping for their project to help with Operation Santa this year. The club adopted a family and will provide them with gifts, non-perishable food items and a gift certificate for a ham, so the family can have a nice Christmas.
On Wednesday of this week, the monthly birthday gathering was held at the country store. Those celebrating birthdays this month are: Bonnie Talbot on Dec. 2, Loretta Seeley on Dec. 4, Kay Hanson on Dec. 6, Herb Mathes on Dec. 7 and Donald Oden on Dec. 10. Couples having anniversaries this month include: Gene and Bonnie Talbot on Christmas Eve, Dec. 24 and Barb and Neal Eddy on Christmas Day, Dec. 25. Everyone enjoyed cake, ice cream and coffee during the festivities.
Remember there is going to be a Christmas dinner held Saturday, Dec. 10. If you plan to attend, they ask that you bring a covered dish of a food of your choice. The Exline Recreation Committee, who is sponsoring the dinner, will provide the meat, potatoes, rolls and drinks.
Everyone in the community is welcome to attend. The dinner will begin at 6 p.m. for this Christmas gathering.
The annual Cookie Exchange will be held again this year at the Exline Old Country Store. It will begin on Wednesday, Dec. 21 at 10 a.m.
To participate, you need to bring two dozen homemade cookies, along with a plate to display them on. Then you may choose up to two dozen cookies from the variety of different cookies that will be there. You will also need a container to take your new cookies home in. Punch and coffee will also be available to everyone that day during the exchange.
